Does this grip onto Ocean Kelp for offshore fishing?

You will probably need to grab a handful of kelp to grip to to make it beefy enough for the grip to work. But depending on the size of your vessel & the currents, you may still have issues getting a good purchase.

How hard is this to unhook or take off the limb or whatever it is attached to. Does it take a lot of strength to unclip it?

It's fairly easy to unclip from tree limbs, , but it maintains a good grip when you're tied to the limbs. I really like it.

Why not just use a caribiner, wrapping it around whatever you want to anchor to and clipping it back on to your line?

You can't get a caribiner around a lumpy clump of reeds and grass as shown in the demo video. This product purports to "grab" a bundle of clutter like a hand whereas a caribiner would need you to reach through debris and brush to get around a solid enough object to loop around. Caribiner = cheaper, yes. But less use-cases than this product.
