Q: How do we get a remote control shown in demo photos, under “hanging pump”?

That's not a remote, it's a Db meter. It shows that the pump runs at about 52 Db

Q: How do you deflate the mattress?

I have unplugged it completely let deflate on its own, then I started on the opposite end of the tubes and roll the air out.

Q: Can you put sheet over it?

Yes. It doesn't fit perfectly on the tube end but it works.
