how easy is this to remove from your hitch with the anti-wobble part?

You need a wrench for the 2 bolts, It takes 30 seconds in addition to the hitch pin removal.

The pin needed sounds like a small part. isnt it easy to drop/lose in the desert and when you do, you cant til bikes and access suv trunk?

The pin is secured to the rack by a steel cable. The pin can not fall to the ground it will hang from the steel cable.

Do these work on step through bikes

Yes, Very well. I have 2 electric step thrus and have no problem loading and transporting
