Bought this for fat removal and trimming of brisket prior to smoking. It works well due to the curved design. A bit of a challenge to sharpen but I highly recommend keeping it razor sharp for efficient and safe trimming. I gave it 5 stars mainly because it's a great knife for the reasonable price, and because it was recommended by Aaron Franklin.

Me as a 37 year production and manager in the meat department this is a very good quality knife. I like to handle having a slight texture to it. I prefer it to knives that have the soft rubber feel much easier than maintaining sanitation almost exactly like knives that we use at work Very sharp correct point edge to handle which is very important when you’re either cutting steaks or breaking beef commodities or if you’re working wild games such as deer or elk also I do you like the German grade steel I have paid more for Swiss made in the past I won’t mention the brand quality is every bit is good for half the price is it a guy who uses these for a living I highly recommend A+!

I Loved the knife the first 3 days stayed sharp, after that it was hard to keep sharp. used it on over 30 beef. If you aren't commercial it's good and light and simple. If you're commercial, find a good sharpener. Check in, it's Aug 10, 2025. The knife is almost worn down 1/3 it's original blade, and it cut hundreds of beef. Recommend it.
