Not always easy to get even slices for home made breads. But this knife is the perfect tool to get the job done perfectly. Easy to adjust and easy to clean. Highly recommend.

Years ago I bought a set of Salter ProSharp knives that I loved but then they stopped making them and friends bought me a few other types of knife to add to my collection, including a cleaver, which was nice but I always felt a little sad they didn’t match the others. Recently, though, I discovered the Mercer Genesis range which I found was identical in styling (bar the branding) to my old Salter ProSharps when I bought an extra paring knife. So I then set about replacing my other non-Salter/Mercer knives including the cleaver. The cleaver isn’t officially part of the Genesis range and has a polypropylene handle instead of a sanoprene one so it’s solid vs soft, but the good news is that they fit perfectly together and you can’t tell the difference when they’re up on the knife rack. Like all the Salter/Mercer knives this has a totally quality feel and weight to it and whilst it scares me a little bit as it’s a massive cleaver, it does it’s job of whacking through slabs of meat like a charm - and it looks pretty badass on display in my kitchen too!
