What is the Hold/max/minimum option used for and how to use it?

This think is garbage. That or the one I got was defective. I was trying to make candy which it said you can do and the temp was way off. It kept jumping up super high then going very low and not rising even though the liquids were boiling and getting very hot. I tried resetting it but it just didn't work. I sent it back

When I use this it changes temperature constantly and its a variety of temperature ranges. Am I doing something wrong?

There will always be a little variation. The range should be small.
