How many servings of food do these pots hold approximately

It would depend on appetite but at christmas there was room for six servings with leftovers. All the food kept hot for the whole meal as well. Hope this is helpful .

can these be put into the dishwasher afterwards or do they take in water?

No I wouldn't recommend putting them I a dish washer. A simple wipe round is all they require they are very good.
