Q: How many grams of sugar per tablespoon?

I have no way of knowing g.of sugar/Tbs...however, this balsamic vinegar is one of the best available. That includes 100 bottle I purchased while in Italy. You may want to be frugal with your usage until you know you can tolerate any amount of sugar which may be present. I highly recommend this product for flavor and consistency.

Q: What's the specific gravity / density?

It is thick. I think it seems and feels like a reduction. But the bottle does not say it I do not think> if it is condensed then a little too much sugar for my taste. Also I should have read better but seems to be a smaller bottle then I was expecting.
