These hold the curds from one or more gallons of whole milk each , so I am processing two gallons into cheese .......They do take several days to drain and dry enough to salt .....

I liked the size of the form but it could have holes on the sides (to drain better) and the lid (part that presses the cheese) could be a little bigger so that the cheese would not escape from the sides when pressed.
