It's Good
Potato Starch is a resistant starch of type 2, which some say is beneficial for gut bacteria. For cooking, it can be used to thicken gravies, sauces, curries etc, and unlike arrowroot, does not need to be cooked off, you can just stir it in whilst the food is hot. Great stuff!

As a home baker and cook with Celiac disease, this is a pantry staple for me. I use it in my gf flour blend, and have never had any quality issues with it.
