How bright is the toast plushie is it bright enough to read a document on a desk I don't like bright lights but don't want something too dim

Though it is somewhat bright I would say it’s better to go with a dimmable table lamp. This is mostly for atmospheric purposes and wouldn’t provide you with enough light to read.

Does this have the option to stay on continuously?

It does have an on and an auto off option. So I would assume that it will stay on continuously if you wanted. We haven’t tested it in that fashion though.
