The Best By date is at minimum 2 years from date of manufacturing. Some packages will have a a BB date on the package as we are currently transitioning to a more sophisticated packaging system. All items are good through 12/2015 or later.

Q: can i use to to help jel my jams/

I'm not sure, that would be the best use, but I don't really think it's is ideal for jellies.I would use agar agar in equal parts to gelatin. Additionally agar agar would be vegan friendly, and has absolutely no additional taste profiles it would contribute. I hope this helps.
