It be doing the dessert work
Saw Alex Tupak using this on one of his videos. Made no bake banana custard with dark chocolate and whey caramel and it changed how I thought of desserts. Highly recommend if you have a vitamix or even hand blender

Used for a shampoo bar recipe
This was an ingredient in a recipe for a solid bar hair shampoo that I make. I wasn't familiar with this product and I'm not sure what it does in the recipe, but my shampoo bar turned out great!!

Holy Grail for cream-based whips!
Welcome lost internet molecular gastronomist. Your whips not turning out right? Frustrating isn't it? Still having issues nailing that righteous dairy whip? THIS IS WHAT YOU WANT. Conclusion: The biggest, most dense, stable whipped cream ripping out of the siphon with amazing mouth feel! Details: After messing around with different starches, gums, versawhip 600k, etc etc etc. I just couldn't figure out how to get the perfect texture for my whips. The gums were OK, but too "wet". Versawhip 600K was not dense (think bubble-bath foam). But iota carrageenan... OH MY!!! Other than just whipped cream, it excels at various savory goat-cheese whips, and even egg-based holiday drinks (Tom & Jerry's... amazing by the way). For those applications, this is my holy grail. But what about in my home? This morning's coffee had salted caramel whipped cream on top: 1/4 teaspoon of iota in a pint of cream into the siphon with a 2 tablespoons of salted caramel. mix. seal. nitrous. done.

Vegan Thickener!
This stuff totally rocks! Not only is it marketed in a cool way, it actually does what it's supposed to do. I love the packaging, it's slick, attractive, not overpackaged, but does have a zip-type closure because no one is going to use this much carrageenan in one recipe. I used it to make a non-dairy, cashew milk based, yogurt. It worked beautifully. I will definitely use this product, purchase again, and recommend to friends.

specialty ingredient
Quick delivery, thanks! Needed small amount of Iota Carrageenan for making marshmallows from Skye Michael Conroy's Non-Dairy Evolution cookbook. Along with Versawhip it worked perfectly to make fluffy, spongy marshmallows - vegan, without gelatin.
