good alternative
Got this for making a solution for acid reflux. Took a few tries to get the consistency I want. Much cheaper solution then getting the brand name stuff.

Great For Gluten Free Gravy
Bought this for making gluten free bread and I have not found a really good recipe for it yet. It does a great job at making gluten free sauces and gravies.

very thick, very quickly
I've been using xanthan gum, maltodextrin, corn starch and maize starch as thickeners. They all worn differently, and some require heat. This product works similarly to xanthan gum in working quickly at room temperature. This works actually much more quickly than xanthan gum. You actually need to mix this very quickly or it will lump up. I used a shaker bottle and still got lumps, but kept shaking and they disappeared over several minutes. How do proportions work? It's hard to say because theres no instructions, no recommendations of amount of powder to use with what amount of liquid to achieve some specific viscosity. There's no equivalency listed to other thickening agents. You really have to experiment to find out, or find a recipe. The nutrition facts make it seems like there's a lot of sodium in this, but they don't say what the serving size is, so that information isn't very useful. It's only very slightly salty (to me) when I taste the powder, so I doubt it will have much impact on recipes unless you're making a firm gel, like gummies.

Works great! i've never used this product before but it does exactly what you think it should. Def going to make me think about how I can change the consistency for baking and cooking needs.

Love it
Great thickener and fun to use. I've falling in love with popping boba and wanted to try making them on my own with different flavors. Juice works as you'd expect but I did hear you can also do this with coffee and tea and such, which is a neat idea. For starters I tried juice first and man what a fun and yummy project!! Makes for a great activity and gets you consumable results that are just fun. You do need Calcium lactate along with it so make sure you buy both if you intend to also use this for popping boba.

good for thickening sauces!
This is pretty good for thickening sauces. I used this to make a vegan cheese sauce a bit thicker, and it worked pretty good! You don't need to use a lot, 1/2 tsp or 1 tsp per cup of liquid is plenty depending on how thick your sauce already is. Sodium alginate thickens liquids more than something like cornstarch or a flour roux will, so don't overdo it! I like that YumCraft put this in a container, most other options for sodium alginate put it in a bag that takes up more space in the pantry.
