For those of us not living in the 19th century, can it be set to display temperature in Celsius?

Nothing wrong with the 19th century but yes, there's a tiny button at the back to switch between the two. You probably need a pencil point or similar to press it.

Do I need to calibrate it? Or it cames already calibrated?

This unit comes pre-calibrated from the factory. If you need to calibrate the unit, compare the reading to a unit of known accuracy and follow the steps below. 1. To access calibration mode, press AND HOLD the “up“, “wrench“and “down“ buttons simultaneously for at least 5 seconds. 2. To adjust the currently selected item, press and release the “up“ or “down“ arrow buttons to calibrate the data value higher or lower from the actual reading. 3. To save your adjustments, press and release the “wrench“ button to adjust the next reading. The CALIBRATED indicator will remain under the calibrated values. After 12-15 seconds of inactivity, the display will save the adjustments and exit calibration mode. Note: Calibrations will be erased if the batteries are removed.

Is it accurate enough to measure humidity in a musical instrument room?

I also have another monitor by another company and for the most part they either agree or only vary by a degree or so each day so I assume it is fairly accurate. Which is giving the correct reading when they vary I can't say, though.
