Once opened, how long do the bread crumbs stay fresh?

A long time. I have never had a problem with them becoming stale. They just need to have the air pushed out of the bag then seal the bag well.

Can you make meatloaf with this? i used a different brand of gf breadcrumbs and it fell apart. will this hold the mealoaf together like "normal" bc?
