How is this different in taste from the Buttery Sweet Dough emulsion?

Very different. Cookie Butter Emulsion tastes like Biscoff cookies (also known as speculoos cookies--spice cookies). Happy baking!

Do these have sugar or carbs?

There’s no nutrition info on the bottle besides the ingredients. Water, propylene glycol, natural and artificial flavors, glycerin, xanthan gum and salt. I can tell you that my muffin recipe calls for vanilla extract. If a recipe calls for a teaspoon of vanilla, I add 1/2 teaspoon Of Lorann cookie butter emulsion and 1/2 teaspoon Of Lorann butter vanilla emulsion and it is better than any other extract I have ever tasted. That being said, I am guessing the artificial flavoring isn’t good for you. So I would definitely use this when trying to impress company (Holidays), but maybe not every day.

What exactly is emulsion made of?

Emulsions are water based and extracts are alcohol based so emulsions don’t bake out in cooking the way extracts do, resulting in better/stronger flavor.
