Q: Is this the same as tapioca flour? How about its consistency when used in baking? Is it as sticky as tapioca?

Cassava flour makes amazing Glutenfree tortillas , stretchy & chewy police regular ones . Cassava flour is made from the whole root , whereas tapioca is the starch part of the root .

Q: Is this flour raw, or cooked? Raw cassava requires special handling due to cyandide concerns, and they don't say.

Think it's cooked in the process of making the flour but not sure. Have baked bread with it several times and didn't get sick.

Q: is it cooked before being ground to deactivate the cyanide?
