Is this product sustainable and cruelty-free?

This product is made from a real coconut! If you feel that by falling from a very tall coconut palm tree to the ground might have hurt the coconut, then it's not cruelty-free. I've never watched a person climb a coconut palm, carefully cut 1 or more coconuts off & climb back down the tree. Usually, it's a climb, a sake or whack with a machete and scurry down the tree to retrieve the fallen coconuts. Then they're whacked with the knife and the outer layer is removed. Why is this yellow in color and white solid particles floating around?

When the product is warm it will be yellow and clear, when it is solid is is white and opaque. Yours might be semi-warm and have a combo of both states at the same time.
