This cheese is absolutely amazing and has just the right amount of aging

Received in great condition with ice packs. Have ordered a few times already and each time everything was great. I would suggest anyone ordering this to be home when the delivery comes as the ice packs aren't frozen by the time it makes it to you. Product was still cold though. That may also depend on the if summer or winter when in transit. Don't hesitate to buy!

Oddly soft. Normally it takes effort to get Parmigiano Reggiano cheese grated. This one grated too easily, almost like a brick of generic cheddar. The flavor was also much milder than I was expecting, especially for a 24 month aged version. A minor sheen of oil was felt and seen, something unexpected for a hard cheese like Parmigiano Reggiano. It oddly lacked the crystals that are super common for Parmigiano Reggiano. Overall, a good value for the money. Not bad by any stretch. I personally prefer bolder flavor (and harder texture), but I'm sure there are those who would prefer a softer and more mild flavor like this one. I'd recommend this for someone planning on using it on a hot pasta dish, which could help mask the softness, and where bold flavor is not wanted.
