It's Sandvik 12C27 steel, which is a pretty premium stainless steel. It's good at edge retention and corrosion resistance, but definitely a compromise between the two.

Does the knife have a hollow or flat grind on the primary bevel?

Mine is in storage but as I recall it is a flat grind on the primary bevel. Also, I have toured the factory where these knives are made in Jacksonville, Alabama during their annual sale and I can assure you their knives are of the highest quality. Granted it has been 5 or 6 years since I've been there but, my knife is very solid.
