How to turn fish into food...
"The Fishmonger's Apprentice" is very aptly titled. If you ever wondered how to turn any raw fish or shellfish into something ready for the pot, oven, or raw platter, this is the book for you. In something over 200 pages of color photographs, a variety of fish and shellfish are cleaned and butchered with how-to instructions. In between the sections are some interesting commentaries by a variety of persons in the seafood industry, from cooks to real fishmongers to seafood wholesalers to restaurant owners. This book may not be of much interest to the general reader, outside those who need instruction on how to take down a lobster, but the seafood cook may find it invaluable. Recommended.

Be aware
Be forewarned this book is almost completely about cleaning and butchering seafood. Yea, 200 pages with nothing other than all the various techniques to clean a wide variety of different types of seafood.That being said, it's still a pretty handy resource. It has good step by step instructions with photos(not drawings) for each step. Also comes with a dvd which is cool.

Seller not reputable, decent book but not comprehensive
Interesting guide to fish butchery, but limited to a few varieties of shellfish and whole fish. Also, the book I received was ripped and the dvd was missing.

Excellent Book
Takes you right to the skills of a fish market and ways to prepare and judge the quality and freshness as well as to trim it up. Best publication I have seen on this topic. The used book pricing is a screaming deal, compared to retail and the quality sent to me was first rate...

Nope...not the right book!
Not a very well written book about the craft of fish mongering. There are many better books out there that tell you in more depth. The cd that comes with it is even worst then the book.

Happy at last - the book I had been looking for
This book contains everything I wanted to know about fish and the preparing of it plus it recommends the best ways to cook it as well. It explains how to skin, gut descale and prepare all sorts of fish which is what I was looking for, I would recommend this to any budding fish cook or just anybody who loves cooking and eating fish. Fish cooking is so much easier when you know what you are doing is correct and less time consuming than struggling with something you really haven't a clue how to tackle!

Brilliant & Informative
I bought this book as I have recently started working in a professional kitchen and its a great asset!Very informative on various species of fish, from storing it, cuts of fish, to the equipment used in each process. It even came with a DVD!Interviews with businesses in the industry provides and insight to the world of fish.A must have for any budding chef or anyone interested in fish/seafood.
