Sure but it will change the flavour of the product. I would use soybean oil, rapeseed oil (canola) or peanut (groundnut) oil.

Q: When the oil gets low can you top it up with fresh oil? If so which oil is best?

It's made with soybean oil so, best to top it up with that. Alternatively, you could use any low-flavour vegetable oil. I'd go for rapeseed. Definitely do not use olive oil! 1) This is a Chinese recipe. They don't use olive oil. 2) Olive oil - especially extra virgin - has a strong taste and will change the flavour, especially the more you dilute it. 3) Olive oil cannot take high heat, or cold temperatures so it goes partially solid in the fridge and you can't fry with it or it will spoil the flavour.

Q: Is it suitable for vegetarians

I have just read the ingredients and they are all plant based! Basically just chilli and oil. Highly recommended, buy lots of it!
