- Over 50% of the ingredients (by weight) are fresh fruits. The other ingredients are Organic Sugar, Glucose Syrup (contains Sulfites), Pectin, and Citric Acid. No food color, no flavoring. Pectin is the sole gelling agent and is a soluble fiber found in the peels of many fruits, including citrus fruits, apples, and berries.
- 3-month shelf life, no refrigeration required, store at room temperature, away from direct sunlight or other sources of heat.

Pates de Fruits have a long history in France and has been a favorite among many celebrity patrons, including the famous French writer Voltaire, who raved about the confection in a private letter in 1741. The confections are a form of preserved fruits. Typically, pulp and juice of ripe fruits are cooked with sugar, glucose, pectin, and citric acid for a long period in order to achieve an intense fruit flavor in the final product. Pates de fruits are enjoyed as fine chocolates are, alone, or with other petit fours. They are also great accompaniment for fine wines and gourmet cheese.
