Q: are these all purpose or only for fabric?

You can use them for whatever you want, but don't try to use them for fabric after using them on other stuff. Yes they are great for fabric, as long as that is all you use them for. My first pair of Left handed scissors were Fiskars way back in the early 70's. Telling my age. Fiskars stopped making "true" left handed scissors after that. So I was really happy when a few years ago I ran onto these and they are "true" left handed scissors. I have three pairs of these. One in each of my stations in the house. One in the kitchen (not for kitchen use though), one by my computer in the living room, and one pair in my bedroom. They have all been purchased in the last few years. My original scissors are in storage somewhere, but I do still have them and they still work properly..

Q: Open wide do these open wide ?

They open plenty wide for anything I've ever used them for, cutting material and various weights of paper. They do not open wide and flat like pinking shears or smaller scissors that the blade opens wide enough to touch the handle.
